Born from over forty years of devotion to the art of confection, Rimini is built on a simple philosophy: quality ingredients, patient craftsmanship, and a deep respect for beauty — in design and flavor.
Founder Michael Schneider has shaped the world of pastry and chocolate since the 1980s. He launched Chocolatier Magazine in 1984, followed by Pastry Art & Design and Grand Finales: The Art of the Plated Dessert. His passion for elevating the craft led to the creation of the National and World Pastry Team Championships, later broadcast in partnership with the Food Network, where he also appeared as a judge and producer.
An early advocate for authentic Italian cuisine in America, Michael opened two Rimini Gelaterias in Beaver Creek and Vail, Colorado, named for Italy’s legendary gelato capital. When he introduced handcrafted artisan chocolates, the response was immediate — and visceral. What began as a labor of love became an obsession shared by all who tasted it.
Today, Rimini’s 100% natural, preservative-free chocolates are available nationwide — a testament to slow process, timeless design, and the luxury of indulgence. Whether shared or savored alone, each piece is an experience: bold, intentional, unforgettable.
